As I sat down to write the first Fall/Winter CSA news letter I wanted something that would go well with our green beans. I was thinking about what else was in season and the first thing that came to my mind was apples. Apple season is just getting started. So, I thought that I would start off with this mouth watering Bountiful Bean and Apple recipe. The flavors go so well together. Enjoy!
Ingredients:
1/2 lb. fresh
green beans, chopped
1 c. carrots, thinly sliced
2 green onions,
chopped
1/2 c. water
1 t. sugar
1/4 t. dried thyme, crushed
1/4 t.
salt
1 t. cornstarch
1/3 c. apple juice
1/2 c. red apple, cored, peeled
and chopped
Mix together green beans, carrots, green onions,
water, sugar, thyme and salt; bring to a boil. Reduce heat to low and simmer,
covered, until vegetables are crisp-tender, about 5 minutes. Blend cornstarch
with apple juice, stirring until dissolved. Slowly stir cornstarch mixture into
vegetables; add apple. Continue to simmer until sauce has thickened. Makes 6
servings.
