Beet Salsa



Let's enjoy some Mexican-style food this season. Consider adding guacamole to the assembly and calling it "dinner".

1 bunch beets, roasted, peeled and diced
1/4 cup finely chopped white onion
1 small garlic clove, minced
1/2 serrano chile, minced
1/4 cup chopped cilantro
1-2 tablespoons fresh lime juice
Kosher salt
Freshly ground black pepper
Tortilla chips, for serving

Meanwhile, in a large bowl, combine the beet, onion, garlic, serrano, cilantro and lemon juice and season with salt and pepper. Transfer to serving bowl, and serve with tortilla chips.
